If I had to guess:
They replaced the RNS screen with a different screen that had touch cabability. Or, they just overlaid a touch sensor over the existing screen (not sure about that one).
The touch sensor communicates with a PC or other device.
When he hits the "Video" (or whatever its called) button, RNS switches to that device (whereas some people have a DVD player). The touch aspect of the screen is likely always on, but is only tied to the device (so if you start touching around in RNS, you'd actually be blindly clicking around the device but wouldn't see/know it).
Someone on another message board speculated that the Japanese RNS systems were built with a touchscreen, but I doubt that.
