Torque value for front brake caliper bolts? Also, pad recommendations...

So, I was at the dealership for the 45k service last month and the service writer tells me that my front pads have less than 5% left and I need to get them replaced immediately for $350. (I thought that we had a dash light for brake pad wear?) I tell him no thanks and I check the pads after returning home with my car to find that they're getting a little thin but probably have at least 5k to 10k miles left on them. Why does the dealership think I'm an open wallet? I need my money to quench the thirst of my car's V8.
I'm thinking about ordering some new pads, but want something that will have at least as good bite as stock, quiet, and hopefully lower dust...with stock wear sensors too. In my forum search, it looks like the Centric Posi Quiet Semi-metallic pads fit the bill. Any feedback on their bite compared to stock?
