It's obvious that reducing your unsprung weight via lighter aftermarket wheels will increase performance and acceleration, but has anyone here added lighterweight wheels and FELT a difference in how the car performs or accelerates? And what's the weight difference between the aftermarket wheels you used and the stock?

The lighter the wheel not just give you more power but it affects the handling and handling response (Wheel response).
I used to have a set of TE37 on my GTR and it actually can't tell the difference. But After I damaged the TE37 and I put the stock wheels back on my car, I begin to realize that the handling with TE37 is more sharp and crisp than the stock wheels. (I used the exact same config on the wheels but with different tires)
