Yes you will see the ESP light on your speedo come on, but the light is the same as when you deactivate the traction control so you need to watch your display when pressing and holding down your ESP button. First you will see traction control deactivated and then full ESP disengaged.
I don't see any 2 stage change when I hold it down after pressing it once...
After pressing once what I get is "ASR off warning restricted stability!" (with ESP off indicator), then I press again and hold it down for 5+ seconds and release it turns it back on.
However if I just press and hold it says "ASR off warning restricted stability!" and then after 3 seconds the next screen says "warning restricted stability!" which doesn't occur with just pressing once for less than 3 seconds. But there are no other indicators. Is that supposed to be it?

Does this apply to 2011's?

Center diff locking only benefits the distribution of drive between the two axle but not when it reaches those axles which is where EDL chimes in.
Also not sure but isn't the crown ring diff only available on the RS5 at the moment. And quite right no traction equal no fun.
Here's some info on the RS5's crown ring diff.

This same thing is happening to me. I have a 2012 manual Quattro A4 and the traction control is killing me in the snow, it's making my car stall. I can't seem to figure out this holding the button down and getting it completely off, it still seems to activate and cause loss of power to my wheels and then I stall, even in first gear. Never happened on my older manual Audis. So frustrating.
