What's the wheel specs for stock 19' wheels?

I agree it does seem backwards at first. I found the best way to visualize it is in relation to the orange line in your diagram on the far right. Instead of thinking of the orange line moving in or out as the offset changes, think instead of the orange line or inner part of the rim being fixed in place. In order to have a lower offset (for instance from 43mm to 38mm) the center-line of the wheel (larger dotted line) would have to come closer to the orange line hence moving the center-line of the rim to the right or towards the outside of the car.

I put the V708's instead, which are also ET38, and do not rub with the stock 255/35-19's.
folgen.. stock s-line y-spoke A5 wheels were 66.56 centerbore...

Yes, all B8s use 66.56 centerbore. No genuine B8 wheel should have a centerbore of 57.1; replicas may tho.

Having an offset of et38 helps you out a lot in being rub-free w/ those 255s.
