Apparently there must be another way to turn the reverse camera on, if it doesn't involve having the car running and the transmission in reverse.

We’re discussing how to close the garage door while the reverse camera is on screen.
The 2021 got rid of the overhead buttons and now it’s invoked on the MMI display.

You can close it whenever you want - whether you are in reverse or not, you still have to interact with the MMI to pull up the controls. When the camera isn’t being displayed, there is an icon of a garage door you press - and then you press the garage door you want to close. But when the camera is being displayed, it’s not readily obvious how to get to the opener control (you slide down from the top of the screen)

My original issue was reversing down my driveway needing to access the door opener/closer option as I left. I was shutting off my camera originally to access the control. Which wasn't the best case as I backed out the rest of the way. Now with the understanding of the pull down with the camera on (I believe this is an iPhone UI/UX standard I didn't encounter until I recently went back to iPhone) it all falls into place.

I have a 2020 and have assigned the garage door send to the * button on the steering wheel. Is this not the same on the 2021? The only time I pull down on the MMI is when I want to open the second garage door.

It is not the same -- unless you have a Premium without the Convenience Package (ironic) -- Premium with Convenience, Premium Plus, and Prestige all come with heated steering wheel -- and the control for heated steering replaces the * button.
