Sorry, I need to be very clear, because something isn't quite adding up.

Which gauge are you looking at when you read 250 degrees F? Bottom left gauge (oil), or top center (coolant) which only has markings for C and H (no numbers)?

If you truly are reading coolant temps, how did you get that number (it wasn't from the gauge)?

Could be a failed thermostat. Does the temp drop at freeway speeds?

Definitely change that tank, also check water pump, just in case (maybe it's time to change your timing belt?)

I use Mobil 5w30, but that shouldn't cause that much of a different from your castrol 10w30. Can your mechanic check the themo sensor to make sure? Also, it wouldn't hurt to flush your radiator (just in case there are blockage inside)

Default what is your coolant temp gauge at?

I had a problem about half a year ago where something caused a blockage in one of the coolant lines, which caused the coolant temps to skyrocket and likewise the oil temps. The blockage killed the aux. water pump, a hose or two, and the thermostat. Since the thermostat was being replaced, I went ahead and replaced the T-Belt and primary waterpump, too.
It was not cheap...but it could have been worse.

How quickly does the needle reach 250? Has anything been done to the car recently?

haven't noticed the coolant temp being out of the ordinary.

the car gets up to 200 pretty quickly, and then keeps going, even with pretty gentle driving. I'd say within 10 mins. used to take like 15mins to hit 200!

recent activity on the car:

80k svc (oil mainly, i think)
replaced coolant expansion tank due to a tiny leak (problem occurred before this)

had to refill hydraulic fluid some time ago, but that seems to be holding up now...
