Why would you want to purchase an end of model year vehicle?
Why rush. You're going to have the car for a long time. Given that the 2001s are on the way (my dealer actually told me that I will be most likely receiving the first 01 they deliver in late September), purchasing a 2000 now would be an immediate BIG hit to the car's resale value. Like about 3-4k. When you go to sell it, that extra year old will really hurt in the wallet.

NO NEW BODY STYLE
That has been a big rumor, with no basis. The new body style isn't due until 2002, at the ealiest, but indications now are that it will come in 2003. Also, the renditions that have been floating the web are pure photoshop, and may not look at all like the new style. In addition, 2001s come with ESP, which is a combination of ABS, Traction Control, the Electronic Differential locks in your quattro, Yaw control, and engine management to prevent spinning. Totally worth the extra 1k.

Increase in production numbers
Not sure. But given the fact that there are a large number of 2000 S4s sitting on the two dealer lots near my home, I would think that the numbers are meeting demand.
