Bentley claims new pressure plates are factory-set / do not need SAC resetting. Bullsh!t. The new PP I was installing was, of course, not adjusted properly.
BTW, the floor jack method works pretty good if you don't have a press.

Basically what people here are discussing is the Self Adjusting Clutch (SAC) mechanism. As the clutch disc begins to slip when the car is at engagement, the SAC pushes the pressure plate closer to the disc/flywheel. This will allow your pedal travel, etc to stay basically the same as the materials wear down. It self adjusts.
The problem is, that if the adjustment is too far downwards, then even when pressing in on the clutch, the pressure plate is not disengaging far enough from the disc and everything is staying engaged.
A way to fix this is described in that link above - which is basically to apply pressure to the fingers (disengagement), and then twist the SAC backwards (Away from the disc)
You can get a visual estimation of how far the SAC is currently at by knowing what to look at on the pressure plate.
Below, my finger is pointing to a piece of metal which has two vertical marks on it. Above and below that piece are two thinner pieces. Those two pieces will move as the SAC adjusts. Currently, they are all the way to one side pressing up against the spring (under my finger). This is the starting position for the SAC, and as it wears, it will move towards the other mark on the center metal. If yours is not all the way retracted like mine, then you may need to have the resetting operation performed.
A new, reset SAC clutch should look similar to this:

Now notice in this photo, the SAC has moved all the way to the other extreme, which is where the problems can occur...
A used clutch where the SAC has adjusted all the way, looks like this:

Some companies "pin" this SAC to disable it from moving at all. Even with that, I have heard of some that were still pinned too far towards engagement and exhibitied the same issues.
