Can anyone tell me if APR stg3 software really even uses the rear O2 sensors?

but I dont think the rears do much other than test the catylist status. They are not in the fuel loop afaict. You'll likely have to have a sensor plugged in the circuit to keep the ECU happy I'd bet... whether its in the exhaust stream or not on APR code wouldn't matter.
APR code does the following without cats present/installed:
- Startup - readiness are all 0000-0000
- Warmup - gradual pass of readiness 0101-0101 or other status between pass/fail codes
- Engine op temp - readiness is all 1111-1111 after 20-30min of running and this is both with cats and w/o cats. Readiness is set either way, pretty cool.
The only noticible thing is that you will have a DTC cat effic code for both banks if the cats are not installed, it does not light the CEL however.
