They mentioned that some of the adjustable shocks out there only allow softening and stiffening of the shock under higher piston speeds. If this is true of the Bilsteins (I don't know, you have to do some research to find out), that means the adjustment will basically allow you to dial in comfort, but not really performance. You'll see most of your performance gains by adjusting low and middle piston speed dampening.
Now, exactly now many inches/second qualifies as low, medium, and high piston speeds...that's another question I don't have an answer for. The only point I'm making is the added adjustability that Bilstein gives you might not be worth the extra money. Gotta do some homework. If you could look at shock dyno graphs showing different settings, this might become very clear, but I'll bet money Bilstein won't give that information to you. So, you're left with finding someone that has this kit, and getting an afternoon of test drives, while fiddling with the adjustments to evaluate the relative merits of their adjustable shocks.
The rebound adjustments on my old KW kit, and presumably my Stasis kit (both kits used different Koni shocks) do seem to adjust lower piston speed rebound dampening, so they do have some overall effect on performance. Neither offered compression adjustment though, which I presume is what differentiates the Bilstein kit...with one dial, compression and rebound is adjusted proportionally?

The differentiate between the adjustability of some of thier setups, with the Track-Sport & beyond being "wide band". My understanding is, as you have noted, that this is about affecting damping at a wider range of piston speeds...
Most basic "Koni Adjustables" are narrow band, IIRC.
