coolant pouring out from behind water pump... what do I do?

Default What do you mean?
Pull the water pump out. You need to replace it. Coolant is going to poor out, same thing when you remove the thermostat housing.

is it ok that is is spilling all over everything?? Doesnt that endanger the timing belt?

Default try to stuff rags under the pump to absorb the coolant when you pull it out.
coolant is going to get on things. clean it off the block with engine degreaser or brake cleaner. Also, before you install the new water pump, the gasket surface needs to be cleaned and prepped. The paper gasket leaves behind all kinds of ****. i got mine all off with a heavy duty pot scrubbing sponge and some simple green. make sure the surface is clean and free from any residues
