dangerous oil temps

while driving uphill through the CA mountains, my oil temp hit 275. it was about 90 degrees outside. the car was def working hard. had four people in it, and going about 90mph . it droppped back down to about 240 after the steep incline. is this normal? i'm running 0w40

not saying it's good... but my car survived... altho the 'low oil pressure' warning came on :-o
Did an extra cooldown lap before coming into the pits..
this was at Thuderhill in July a few years back... air temp was 110, track temp was easily 140-150.

I climb mountains in the S4 quite a bit and I try to drive so that the boost isn't on for extended periods. I never really get above 250 degrees.
