Did a few runs yesterday with my homebrew stage 3 setup. Anyone care to comment on readings?

That doesn't help much....unless either you add throttle position or do a single 3rd gear pull.

You are making more than 19 psi based on your logs. 2500 mbar=1.5 bar=21.75 psi

I see spikes that high, but not continuous. I need to do some single gear runs.

Not necessarily. My local shop gets $100 for 6 plugs.

Default Straight K04's with stock airbox. Weather varied from 60's-90's when I've logged..

but the g/s always is about the same.
