Default High? Oil Temps?

So the weekend before last I was driving from Columbus to Cincy, about an hour and a half drive. We were going to a car show so me and a few cars were playing around a little. Noticed the oil temps were a little high so I decided to check the oil. The oil was a little low and because of the playing I attributed the oil temps to this.

Early in the week last week I grabbed a quart of oil and filled the car up (it was ~1quart low). This and driving normal didn't bring me back to where I'm used to seeing it. This oil had a little less than 3kmi. so I decided to change it to see if that made a difference. I would usually wait a little longer till I had a free weekend day, but I wanted to see if this would change anything. That didn't make a difference.

The temps raise slowly like it normally would and moves pretty slow and steadily when they do, not erratically like I would expect to see if there was an issue with the oil temp sending unit.

The coolant temps are rock solid at the 12 o'clock mark.

I'm used to seeing ~200C in cold temps just driving around normal and a little below 225C when it's pretty hot out. Right now ambient temps are 40F-70F. The rest of what I'm describing will be when it's ~60F-70F during the day to take out any variation there. The oil temps while cruising on the highway at 74mph with the cruise control on will be a little below, at, or even above, 225C. It seems as if when I'm in stop and go traffic going slower, the oil temps actually drops, in the most drastic cases to something more normal for these ambient temps (~210C-215C).

I never remember ever seeing anything over 225C during normal driving on the hottest days we have here. I'm a little concerned about the seeming slightly higher oil temps and very confused about my temps dropping when I'm going slower with changing speeds as compared to faster with constant speeds?

Nothing else has change that I've done or that I know of. I'm using the same Oil I've always used (Mobile 1 0w40), with OEM filter (changed to these last fall). Car has 108kmi and the whole timing belt job I'm just thinking that this could be an indicator that something else is going on, any advice is greatly appreciated! TIA.

225C (437F) is really hot for oil temp.

Default 225C is normal, 200C is a little low.

Very aggressive driving (track) in 80+ degree heat will drive it up to 275C, which is also completely normal.

Default Yeah, I realized on the way to work looking at the gauge that I had written that wrong...

... I would be definitely in trouble with oil temps that high.

Default So if that is normal?

Why were they a little low before and why did they change after two and a half years?

My main concern isn't necessarily if they are a little high or low compared to normal. As long as they were consistently like that I'd be ok with that. Obviously a little lower would be great, but if they are normal or a little high, that's ok. too... A lot high or low and I'd be concerned.

That seeming sudden change ~10F from what I'm used to seeing is what worries me. I just don't want that little change to turn into a big change if that's what this might be and I can catch it early.

Little change can=something starting to go bad which leads to big change=something going bad=something broken.
