How hard is it to replace rear bumper impact absorbers? Calling Jim DeArras?

A couple of weeks ago I had the wonderful experience of being rear ended by a beautiful 72 baby $hit brown AMC land yacht. I got it estimated by a body shop and the work includes a new rear bumper, paint work, and replacement of both rear impact absorbers.
The money from her insurance company is on the way, and I am seriously considering not having it fixed. Why? Well, I'm thinking the chances of getting hit by another lovely yand yacht (or perhaps an SUV next time?) are good enough that I'd rather just pocket the $1500. I know this sounds stupid, but, whatever, humor me with this...
If I end up doing this, the one part of the work I would still probably do is to replace the rear impact absorbers. How difficult is it going to be to remove the rear bumper, replace these, and put it back on? Is it straight forward enough that somebody who doesn't know how to do body work could do it?
