Which insurance companies cover driving events? Just found out mine doesn't :/

backed into a wall at 35-40mph. When he called for the claim they asked him where it happened, his response was a private road in watkins glen. When asked if he was racing, he answered no, as he was at a DE. They covered it and are still covering him (~6 months afterwards).

I have AAA, and their policy only excludes incidents listed as speed contests or street racing, which again I don't think you can legally consider a DE as. It states nothing with regards to driving anything on dedicated race track facilities, which some policies now do.
Supplimental insurance is pretty cheap relatively speaking for limits you set yourself, covers you for 12 months, and even includes storing and towing your car to and from events should you have something akin to a real race vehicle. Basically it covers you whenever your tires aren't on legal roads.
