just curious....how you would you "break in" an engine?

"How" has a lot to do with whether and/or how the cylinders were honed...
One of the most critical functions of "break-in" is bedding in the piston rings. Obviously you need to consider the un-polished high spots on bearings and journals, but you have to get enough cylinder pressure to get the rings to cut in and mate to the cylinder walls BEFORE the honing "tooth" polishes down.
The shop that builds the engine needs to consider the honing job they do with respect for the hardness of the compression and oil rings. And they should then tell you how to break it in.
