Just put on bilstien's already had eibach pro's, why is the car higher now, will it settle?

The Bilsteins are a high pressure shock, and therefore effectively increase your spring rate a bit. This results in a higher ride height.
I'm running Bilsteins Sports w/stock springs on my Avant, on a groove 1/2" *lower* than stock, and it's still slightly higher than stock.
Since Bilsteins last virtually forever, this isn't a condition that will change much over time.
