I'm converting my Bosch MAF to Hitachi.. and assumed the connectors would be physically the same (dumbass me).

Anyone have a Hitachi connector they wanna give/sell me? Yeah.. and I know I have to swap a couple wires.

You can buy the connectors and wires at the dealership.

What is the difference between bosch and hitachi?

The shape of the connector is different and signal output is different (requires different ECU code)
