replace my thermostat? Would a stuck thermostat just keep my engine that cool in 80 degree weather?

all of a sudden my readings started dropping lower and lower and I thought "crap!" my t-stat is gone.
Now, granted, my old ECT sensor wasn't bad, so I swapped it back in and viola! everything was back to normal again.
Def try a new ECT sensor before anything else.
Oh, and I didn't have any codes.

I just replace my coolant temp sensor (green guy, passenger side) about 5000 miles ago, should I replace it again?

Not sure this helps, but I had the same symptom (little to no indication on the coolant temp. gauge). Since replacing the OE ECT sensor with a green one and replacing the thermostat (as part of a t-belt job), the gauge works as expected.
Replacing the sensor seems to have resolved some cold-start issues too.
BTW, ECT = Engine Coolant Temperature
