Ok, I almost electecuted myself proving you wrong...
I got my friends S4 and did the EXACT same test...coil pack with spark plug pulled out of the head and sticking up in the air, cranked the car, and when I pointed to it from about a FOOT away to my friend, it arced to my finger and now I have a nice purple bruise on my right index finger. Everyone thought it was a great show, but when the excitement was over, we tried it again with fingers safe distances away, and both saw and heard the spark plug arcing. No grounding to the head.
As a result of this experiment, I went back to my car and did the same thing, turns out it's arcing too, just less visible. Very strange.
Between spark plugs needing grounding and people telling me I'm gonna have oil in my intercooler, I'm just going to take this thing to the dealer and pay whatever exhorbitant fees they want. I wish I could fix this myself, but nobody, myself included seems to know what's going on.

You *must* ground the metal part of the plug to battery ground, or the frame for a true test.
The spark may jump a few inches to a ground(like lightning), but if you don't ground it, you won't know for sure. The ground completes the circuit. Use a set of jumper cables to clamp the bottom of the plug(threads) to the battery neg terminal. you aren't supposed to hold it or stick your finger in the line of fire!... LOL. When you crank it, the bottom of the plug should have a blue spark at the electrode.
This is what I do for a living. Trust me.
If you in fact have spark, I'll bet you aren't getting fuel, or your timing belt may have jumped (not that likely).......
While someone cranks the car, have somebody listen by the gas cap for the sound of the fuel pump... use a ratchet extention against the filler neck and your ear.

Needs a ground or not, my finger hurts, and the plug fires...
And the coil pack has 3 prongs on it...*shrugs*
it may ground something to the head, but jeez...it works without it, so I'm not sure what that's about
