Replacing the PP to flywheel bolts...I have some allen head bolts that are the correct length
and threading, and they are a grade 12.9 bolt. I also have some that are grade 8.8. I assume that I should use the higher grade 12.9 bolts, or is there any reason I should use the grade 8 over 12?

Are you sure? Stretch bolts usually get torqued to a certain value + a certain amount of degrees
past that...the torque value for these is only 20 N-M...I dont see how they would stretch...so that's why I'm wondering if I would use the 12.9 allen head bolts....

That's for the flywheel to crankshaft bolts....I'm talking about the pressure plate to flywheel
bolts...they are only an M8 bolt, I have a feeling that 60NM would snap them off, let alone adding another 90 degrees. The torque for these is only 20NM...sorry for the confusion

Alright thanks. The reason I am replacing them is because I already reused them
once when I installed the RS4 clutch, and one of them got kind of stripped out in the hex head part...I think using a grade 12.9 bolt would be fine, only maybe torque it a few more NM than what is specified since it is a higher torque rated bolt.

ohhh... I for some reason read flywheel to crank... instead of PP to flywheel. lol
Sorry for the dyslexia ;-) The flywheel to crank bolts are stretch. Not sure about the PP to flywheel though. Personally I'd stick with OEM because it's sucha PITA to get back in there if the bolts you have break or loosen up. Up to you though.
