Why wouldn't you replace the pressure plate?

Default Put in on a press and put pressure on the diaphram fingers, then rotate inner assembly...

with a couple screwdrivers so the small springs are compressed.

Question though, if the plate already has moved down the ramps, why do you want to reset it? Chances are the disk and pp surface have worn. If you reset the plate you better have a new or thicker clutch disk to compensate for the wear.

Don't need... In fact... I am asking this question for my RS4. They both have SAC system on their pressure plate anyway... Do you have any idea how to reset the pressure plate for new clutch plate?
