Despite what most of the people on this board say about the the RE040's, it wasn't that bad of a dry handling tire. I now have 235/45 AVS Sports and they are much better than the RE040's
What you notice with the Alpins is that since they are an H rated, they have a softer sidewall and will "give" a little more while cornering. Despite the give under agressive cornering, they are very predictable. I never felt like they would just break away from me. You obviously can't push the car as hard but I felt like I know what the limits are of the tires and felt very comfortable with them and they let you know when you are pushing them.
The dry handling is a definate notch below the stock tires and that should be expected. I would say that you might get a tiny bit better handling in an all-season tire but you'll never get excellent snow traction with them. I have never been a fan of all-seasons since they are mediocre at best in all conditions and do not excel in any conditions.

I bought 8 of these, 4 for the S4 and 4 for the TT. They are narrower for added grip and should be a good tire for Maine winters. We don't put on a lot of miles in the winter but do have a steep driveway and need the grip.

are quite hard to predict. i live a lil' north of philly so i can expect anything from a blizzard to rain and everything in between. i need a good all around winter tire that will perform adequately in such conditions.

I ran 205/50/17 last year. These were great in the snow but I scratched the wheels a couple of times because of the narrow tire. I could also really squeal the tires on hard acceleration, so I wanted something a little more meaty. It's primarily dry here in Denver during the winter, so I'll just have to take it easy when there is heavy snow.

With quattro, you will have more than enough traction with 225 size winter tire, while maintaining much of your dry road capabilities. No need to downsize with quattro. You definitely need good H or V rated snow tires, however.
