Stoptech 355 or 332? Is there a big difference between the two?

Is the stopping distance better?
What would be the cost of upgrading from 332 to 355? Is there a resale value for a 332 rotor?

I assume the main reason for the larger kit is better heat dissipation, and therefore even less fading. There is a great resale market for pretty much all used Stoptechs - most people just get the 332, since they are more than proficient for street duty, and great for the track.
Stopping distance won't change on a single stop - the limit here is your tires (traction). However, with multiple stops in a row, I suppose the 355 might perform better, as it might be more resistant to fade.

but the hats are probably different between the two kits, and I doubt you would find a buyer for the old hats...it's the sort of thing you buy once...usually new with your stoptech kit.
Additionally, I would think you would need to buy caliper brackets from stoptech. Again, your old one's probably wouldn't have much value.
I think if you wanted to upgrade from 332 to 355, you might be selling your 332 kit outright, and buying the 355 kit.
