in terms of performance, do coilovers offer any significant advantages over springs??

Yes
you can have the car corner balanced
you can choose any ride height you want (that'll effect camber, unless you get a camber kit)
you can choose any spring rate combo you want
you can select custom valving

usually.
If you're comparing a coilover setup that's sprung exactly the same as a spring/shock combination, then you're advantages will be corner balancing and height adjustments.
However most coilovers are sprung considerably higher than a typical spring/shock combination. For this reason coilovers will typically offer a little more performance, in addition to the two reasons above.
