What is the best size for an 18 inch setup? 255/35 or 245/40? Is there any problem in fiting these tires? And what is the best wheel size? 8 inches or 8,5 inches or even 9 inches?

Your tire choices are as follow:
225/40/18
245/35/18
255/35/18
These three sizes are within spec of stock rolling diameter. However, if you plan on lowering your car I don't recommend that you put the 255/35/18 unless you plan cutting the plastic fender liner.
As for the wheel width, if you buy a 18x8, you should not put a 245/35/18 or bigger because it's already out of spec and tire wear is going to be inconsistent, in other words: you will need new tires every 5/6 thousand miles. If you do want to put the wider tires go for a 8.5. There really is no use for putting a 9" in the S4, plus you won't find any wheels for it, other than custom set ups with custom offsets.
