Tried ordering some 18x8 wheels and they told me they wouldn't fit w/o spacers. Is it

In regards to ride being crappy or not with spacers, make sure you get the hub-centric ones to avoid vibrations. When done properly, spacers are no different than having a wheel with a similar offset.

Stock is 17x7.5, I run 18x8.5 with 245-35-18's in the summer without any issue/rubbing and my fenders are stock (not rolled). The important thing for fittment however and what would cause you to need spacers is the offset. Plenty of people run spacers to get it right so you shouldn't have a problem.

As a side note, you should also take into consideration how you want the stance of the car to look beyond the rim diameter and design of the wheel. What I mean is that the stock 17x7.5 sit inside the wheel well fairly deeply and as such have a neutral or even reserved look. A set of approximately Nx8.0 should be just about flush with the fender looking at the car from front to back. When you start getting above that or use spacers, it's going to push the wheel outside of the wheel well. This gives it a really aggressive look however also keep in mind it will require you to be a little more diligent with cleaning as it will kick up dirt/mud onto the side skirt and doors. As I said, I have 8.5's on it and really like the look of it, however the dirt thing is a little bit of a pain and if I could have done it again, I would have gone with 8 and no spacer. Also keep in mind, the wider you go = more grip but also more weight if those are concerns at all.

Reason I want to make sure if because of the following post suggesting that the max is 17 for a 2002 Audi A6 3.0.

I was told the Audi RS8 reps would clear the stock b5 s4 brakes without any modifications or spacers. As far as the rim diameter being limited to 17 - that is not correct. You would just get thinner tires with your 18's (as you've indicated you are doing in your post). Don't take my word on it though - ask the seller, they should be able to tell you about fitment.
If you can get different tires I would go with Kuhmo Ecsta ASX of the same size (235/40/18) - they are a great price for a W-rated all-season tire.
