Use Mobil 1 0w40 year round

Yup, although 0w30 is absolutely fine in the winter, and often easier and cheaper to find.

0w40 for just daily driving? Seems kinda extreme.

Default Definitely easier, but Mobil 1 0w30 doesn't meet all specs called for by the S4 owners manual
0w40 says right on the bottle, "European car blend" or some such.

Amsoil Series 2000 Synthetic 0W-30 Motor Oil is good.

Default yup, if cold i would def. avoid the 5W stuff and go 0W-40 or 0W-30
as the commonly avaialble 0W-30's don't mean ACEA A2 or higher, i run 0W-40 year round.

How about the amsoil 0w-30, does it meet all the specs?

The specs listed are listed as xxxx or xxxx etc... so as long as it meets on it is fine.
