Default 40 offset makes the wheel closer to the inside. Standard offset is 35...>>

Lower number moves the wheel to the outside.

is there a limit of the offset before i hit the suspension.. like could i fit 18x7.5 42offset ?

Default you'll want spacers... tho they'll fit w/o them...

I had 19x7.5 ET40 before, and they fit (cleared the brakes), but sit very inside the wheel well. I have some pics at home if you want them.

Default offset varies with wheel width ...

18x7.5 with a 40 offset would likely be no worse than a 18x8.5 with a 35 offset; but it's not an absolute thing. Default RoberTT, Resident Wheel Guru....

If I chose a 19x8.5 with a .35 offset front and a
19x9.5 .40 offset rear, is that going to work? I think some cars are setup this way. I don't want to rub as I am 1.75 lowered front and back.

Any thoughts?

Default It'll fit, but it will look funny. Especially at the rear.

IMO, ditch what you have in mind and just get another wheel.

Default No way ->

Neither the front, nor the rear. You need something like 20-30ET for the front and 21-30ET for the rear, with those widths (provided that you're quattro).

likely no worse as far as rubbing but it will be inset more than stock.
