Same thing happened to me. Your haldex control unit may be toast.
If you have a VAG-COM, check the AWD control unit for 2 things:
1. check for the following DTC
00453 - Function Limited due to Over-Temp
2. Check Haldex differential temperature. If it's over 90 deg celsius, or if the temp doesn't change when driving.
The only way to fix this is to bring the car back to the dealer and get the Haldex Control unit replaced.

Sounds like you're just not familiar with how ESP works.
If you accelerate hard enough to get all 4 wheels to slip, ESP will come on and I guess you could describe the feeling as stuttering. The light will flash when this happens. If you are familiar with how ESP feels, and this isn't what's happening, then maybe there's an actual problem. If your car has just never broken traction before, then it may just be due to the recent cold weather a lot of the US has been seeing. Summer tires don't necessarily get along with cold weather, so they may be slipping more than you're used to.

I don't ever recall seeing this driving in the snow or on the track where I can for sure remember
the rear of the car moving out on me.
I've got the APR chip with Stock, 93, and 100 modes. I'm currently running 100 octane fuel and seeing how it does in each mode. I now have one half tank and am wondering if that has anything to do with it.
Could be a Haldex issue as noted below.
I just wanted to rule out chip issues.
