The French get the profits and the control of our future air defense but at least it's some jobs to an area that needs it.

They get 179 tankers, which is hardly control of our ADA systems and efficacy!,,,
But hey, we have to learn frog! (I are one)
The EADS bird flies further carrying more load with more efficiency. We need to get over the NMH (Not Made Here) syndrome and get what works best.

I can't speak to the relative qualities of Airbus over Boeing but I worry about turning...
any defense supply chain over to a foreign government. In this case, a 3rd of the tanker fleet is pretty significant in terms of long range air defense I would think. Imagine the French government gets mad at us and decides to place an embargo on spare parts down the line. I guess it's a unique way to force diplomatic relations!

W/O insights, I opine the spares are in the contract.
Defense contracts are packages, not just (in this case) airframe and instructions. Northrop-Grumman have significant manufacturing capabilit, and will in all likelihood have a large share of the spares and subs for the project.
Recuse: my brother works for NG.
The tankers are force multipliers for air interdiction (defense is actually shooting them down from the ground or sea), and bombers deploying worldwide. The B2 makes several in-flight refueling hits from MOntana to A-Stan and back. So yeah, if the French suddenly pulled a CHarles DeGaulle (leave NATO and ban US forces on French soil), it'd be interesting.
