I'm pretty sure all they have to do is ready the Logs.

Things like fuel trim will give away a chipped car...or so I've heard.

well, not unless you've switched to stock programming...

If you're running stock programming then the fuel trim will look stock, and I don't think the log (if there is a log) goes back far at all.
