I've been associated with many regional meets here and attendance is always the best of any reqion because we get both serious drivers like yourselves as well as those who just want an excuse to come to Vegas.
Getting a mere 150 rooms in one hotel is a slam-dunk here, and a dedicated area in a parking garage as well. I agree the police frown on sports cars tearing up the Strip at 50+ mph but there are many great drives outside of town where police presence is slight to non-existent (having cruised at 120 in many of these areas). For other clubs I've organized group drives to mountains and state parks and evening paddle wheel boat cruises on Lake Mead. For something new, how about a major area of the ESPN Zone reserved just for us with the TVs in our area focused on car races? Most of the people I've talked to who dislike Vegas have never ventured a block from the Strip,

my head. I can tell you that I think Bishop is a step in the right direction, away from Vegas. I am sure we aren't always going to find a "perfect" place, but like I said it is a good suggestion. And if nothing better is suggested, I think it is a nice place to go.
I'll do some research and see if I can come up with any better ideas.

The 40-acre site on the northwestern edge of Aspen is home to the Modernist Bauhaus buildings of The Aspen Institute. An often-overlooked architectural gem, The Meadows campus is an icon of the most important architectural movement of the 20th century, the Bauhaus-inspired International Style.

I go to the Hyatt Regency for the Monterey Jazz Festival (~ 6K folks) every year. It's right on the Del Monte Golf Course. Has banquet facilities. But there are many more. Remember, Monterey is where Laguna Seca ALMS is held.
I also know of a great hotel right on the water just south of Carmel. We did an offsite there when I worked at Apple.
There is also Pajaro Dunes. Right on the beach. A little pricey, but has banquet facilities.
