Well, other factors that will need to be taken into account are...
design of the spokes (flat even surface, rounded, etc), wheel style (lip, no lip, etc), and also the width of the spokes.
If you went with a 8" rim, you will have approximate 67.49mm (2.66") for space between the caliper and spokes, offset, spoke width and lip.
The good thing with going with a narrower rim is that you'll have more clearance on the inside from the rim to the strut.
