Please explain why tapping to the FPR tube give you boost readings?

The fuel pressure at the injector tip has to overcome the prevailing pressure in the intake manfold. The regulator is there to allow the ECU to meter fuel based on time and try to make it independent of the intake pressure.
Fuel is delivered at 5+ bar to the regulator. The regulator then presents that fuel at a constant 3 bar (or whatever "bar" your FPR is) above the intake pressure. The regulator needs to know the intake pressure and so that is the input line you tap into. It is the same as the intake pressure.
