I can't explain the math behind it (having received a college degree without taking a single math course...) But the answer always is a multiple of 9, and all the multiples of 9 have the same symbols. Every time you restart, it changes the symbols, so the 9 multiples all have another symbol.
Did I spoil it for everyone? I didn't try to figure out why it's always a multiple of 9, leaving that for someone else! (Perhaps someone with other than a BJ -- bachelor's of journalism -- degree!)

any two-digit number can be written as
10x + y (where x is the 1st digit and y the second - e.g. 76 is 7x10 + 6)
the sum of the two digits is x+y
the original number minus the sum is
(10x + y) - (x + y)
= 10x + y - x - y
= 9x
so the result is always a multiple of 9. (in the example, x=7 so the result is 63)
