Starting in First Gear from Standing Start - Car seems to LAG or Drop RPM Significantly then kick in
as pressure builds.
Is this normal? Should I be revving more before clutch release? Could it be a sign of any trouble?
I notice it particularly if the AC is on too.

About half that hp(5 or so), especially at lower engine rpm.
Car a/c is about equivalent to large room a/c for cooling capacity. It certainly doesn't take 10 hp motor to drive a room a/c.
Car a/c compressor has to be somewhat oversized to cool at idle, so it takes significantly more power to drive at higher rpm, but not that much. You can feel it at cruise in many cars because @ 60 mph cruise car only requires engine to produce maybe 40-45 hp, so 5 is a large % of total engine output.

It just takes time to get used to
At first I used to release the clutch at about 1500 RPM and slowly accelerate. If I got lost in thougts or got distracted, sometimes I release it around the 1000. That is a real pain, the car significantly loses power, barely moves but then jumps when RPM come to 2500 and higher
Just give more RPM and find your spot to release the clutch. I do it depending on how fast I need to go.
