Default Temp gauge rising and falling

I've recently started the habit of letting the car idle for 1-2 minutes before shutting off. I'm noticing that the temp gauge rises about 30 seconds into my idle to about half way between the 1/2 and 3/4 markers. The rise takes about 10 seconds, then it'll stay there for maybe 5 seconds, before falling back to the normal middle temperature, again at a pace of falling over 10 seconds. Is that normal, or am I due for some type of maintenance like a coolant flush?

Default happens to mine too, but only with the a/c compressor off...

...changing the coolant sensor had no effect on that, so i think it's normal.
