Thermostat question: new t-stat not acting as I expected

Last Thursday I had the timing belt, water pump and associated bits replaced by a reputable independent in the Chicago area that works on Audis, BMWs and such (Renn-Art). Because my car had been running a non-OEM Behr t-stat for the past year and the temp needle would often move about 1 mark to the right of TDC, I asked several times about which t-stats the new shop used. They assured me they use OEM t-stats and so I was looking forward to my temp needle being well-behaved again.
But after the replacement the car continues to run somewhat hot... needle between 12 o'clock and one mark to the right; HVAC block 49 says it's running between 98-100C once fully warmed up in a typical suburban commute. Along with the timing belt, it got a metal-impeller water pump and a coolant flush, so I assume that's not the problem.
Wassup here? How would you sleuth this out?

It will take some time to burp the air out. Mine did that for a little while after the t-belt change. Seems to run normal now, except when it gets really warm out and then it still shoots past the middle mark.

to trip the sensor and the car is running hot because of that?! my shop has warned me in the past of the system burping after the 2 timing belts I've done.....

the hose that has the temp sensor on it.
this will allow the air to bubble up thru the system, out the over-fill tank.
you may need to let it ilde for 30 min. or more.
