Water Temp Goes to 1st tick past 190 Very Easily at Idle............

A few weeks ago I had the timing belt changed, water pump, tensioners, and thermostat. Also, changed water temp. sensor (green). If I drive normally, with the A/C off, the water temp will move to the first tick mark past straight up when I let the car idle for a bit. I can turn the A/C on, and it will then move back to 190F.
Since the A/C on, or revving the engine corrects the problem, I will presume the temp. sensor is working correctly.
It makes me think the thermostat is not working correctly.
What are your thoughts?

When I switched from a faulty coolant temp sensor (the gauge was way off) to a new green one I noticed my car would bump one tick up more frequently than it used to. The secondary fan kicks on and brings it back down as its supposed to. Just seems like normal behavior to me with maybe a slightly more sensitive sensor.

I now experience the temp gauge going up to the first tick past 12 noon as well. (I changed to the new green top sensor a long time ago so I'll rule that out.) I think the new thermostat is the cause. The gauge goes back down to 12 noon pretty quickly though so I'm not concerned.

12 o'clock position. i didn't give it much thought and kept my eye on it. then, a month later, the one tick past 12 was the norm...and noticed that on a cold start, with the ignition on, engine off, the temp gauge started one tick up. i checked it on VAG and readings were all correct...both at cold and normal.
fast forward 3 months...the one tick went to two ticks up. brought it to the dealer and they said nothing was wrong. i was getting nervous since my warranty was about to expire in another 2 months...so i pursued it and finally got the cluster replaced which fixed it.
