Somedays it takes considerable time for the temp. to reach correct operating temp. Somedays it gets there within a mile from home. Then somedays while driving normal it will just drop to a couple of ticks to the left of normal and then come back to normal with no change in speed or conditions. I am still running the stock temp. sensor on the 225.
Any suggestions????
I have a green sensor, but no o-ring.
Is it OK to reuse the existing O-ring when I changeout to the green sensor?

never reuse an O-ring...imo. At the price of a whole new sensor at 6$ or so...its worth it.
As far as the gauge moving. Setup your AC to monitor the engine temp and see if its running cool...which more than likely is not.
<push recirc button and up arrow together...rotate temp control till you see 49C..then hit recirc again> this is your engine temp.
More than likely, it is the sensor...could also be the precursor to a cluster problem....IMO.
