Done it a couple of times - here are some tips
Put bottom covers on first.
Extend straps to almost their ends.
Lay seat cover on seat. Poke the rear two clips and straps back between the seat and the backrest. Now slide the seat cover as far forward as you can. Use a coat hanger or something similar to push the front straps under the seat and to the rear. Reach under the seat from the rear and snap the clips together. Pull on clip straps and start to tighten up the straps. Now slide seat back into place and pull seat into place from the rear seat area. Now reach back under the seat and tighten up the two front to rear straps. Now do the side to side strap.
Backrest covers are tough to get velcro to line up but you just have to keep working at them.
Another method that helps is to take your seats loose from their mounting points and tilt the seats up so you can get under them. Just don't pull the seats out as their is an airbag attachment wire that I don't fully understand what happens if it is unplugged.
I have had my on and off a couple of times. I feel your pain.
