I have a 02 a4 1.8T non-sport...
I have been eyeing BBS CH's for a while now.
1) What tires would be good?
2) Tirerack offers them for 429 a wheel... anywhere cheeper? (I have been between Axis Supermesh and CH's and it's only because of price)
3) My gap is huge now... would an eibach pro kit be adequate for a nice gap?

We offer the 19x8.5 for $410
If you have the factory sport suspension, then you shouldn't need to lower the car any. However if you have the non-sport suspension, you'll probably want to lower it a bit, as the gap will "look" bigger with the new wheels.
Springs and shocks are the suggested upgrade. Springs alone are doable, but not suggested for long term, as the shocks will wear out sooner.
Email if you have any questions.
