somethings not right

Car's sitting on 18x8 Kahns w/ 33 offset. Shes also lowered with H&R S4 Ultras, although they are as high as they can go. Unfortunately I still rub somehow, despite the fact that I see other people out there with the same suspension, same rims, or both. Frustrating as all (!@&#. Someone please help.

The H&R ultras lower your car about 1.5" at the highest setting so that shouldn't be a problem because I had my car lowered 2" before I adjusted the coilover height and i had no rubbing. I know that Nitto tires are very square shaped on the outer shoulder so in a sense it could be considered a little wider than your standard 225. S-03's are known to be wider than any other tire in the same size. The ET33 offset does push your wheel out a little further than other wheels so it does come farily close to the fender anyway. I think a slightly narrower tire or one with a more rounded off shoulder might help. However, since your tires are new you probably don't want to trash them so I say just roll your fenders and you'll be fine.
By the way, are you rubbing the inside of the fender or rubbing the suspension components? Is this in the front or rear?

In fact, when NGP in aberdeen, MD rolled em, they fcuked it up and cracked the paint. As far as I can tell, it only rubs the fender lip and lining close to that (to the point that its been eaten away). The rubbings also managed to distort the fender lip itself, pulling it down in some places, and sucking it in in others.
When you say lowered 1.5" what does that mean? What is the most effective way to measure ride height drop? And this has to be in reference to what I had on before?

There is a minimum lowering for most coilover kits. For the Ultras I believe it's 1.5" lower than stock ride height. To get a true measurement, you would have had to measure your car before you switched suspensions. I measured mine from ground to the highest point on the fender. Stock ride height was 26.75" in the front and 26.125" in the rear. Now I'm 25.5" all around.
Do you have adjustable control arms? Maybe you should dial in a little more negative camber to help the tire clear your fender. Also, I think most guys who roll their fenders cut away a portion of the lining near the fender lip for added clearance.
