I've got 225.45.17 Re730s with the Eurosport springs and a 19mm rear Neuspeed swaybar set on the soft setting.
What do you guys recommend I go with for the track this weekend to get a little oversteer out of my car?

How does your care handle now, is it mostly neutral? I would first get a feel for the car with even pressure on all 4 tires, then try boosting the rear a bit if you need more oversteer.
I seem to remember running 39psi cold pressure on all 4 tires at my first track event. The handling was pretty neutral, no oversteer at all, but then I don't have the 19mm rear bar either.

and see where your hot tire pressures end up. Take pressure at the end of each run (you probably don't want them higher than 44 psi) and document how the car felt. Note whether there is any sidewall scuffing (add pressure). Change by no more than 2 psi increments with each run. Go up in the rear to loosen it up a bit. Be prepared for the tires to squeal. The noise precedes loss of grip by a fair amount though. HTH
