I am planing on getting a set very shortly but I dont really know the difference. going with a 235-40-18..

I think i'm going with so3 for better wear and hydro resistence

if not for any other reason, then for the fact that S-02 is an older design and is no longer made. So, if you buy a set now, and then damage one of them one way or another (pothole/bubble/flat), you may not be able to find a replacement.

Other than that, I think the S-02 may have a slight edge on dry traction/grip, but S-03 is superior in the wet, and lasts a bit longer. Overall, the S-03 is a newer, more technologically advanced design. Of course, not everything new is always better, but let's hope so ;-)

I have bilstein neuspeed shocks on the second from the lowest pirtch, I think I will be ok but I may have to roll them. yuur thoughts...

I don't think so, I'd bet you'll have to roll your front fenders at a minimum.

It also depends on the offset of your rims. You may have to roll fenders, or add wheel spacers and roll fenders.
